They’re out! And you see them EVERYWHERE in the city…
The Bái cái are out drying and seeing this you KNOW it is OFFICIALLY cold season in Shenyang, China.
The locals are getting ready for those long winter months by doing what they’ve done for years…drying their cabbage. You see cabbage and leeks going by the truck full this time of year, and the Chinese people stock up.
The large Bái cái are dried outside on any flat service imaginable, then put in a vat and fermented to make special dishes later in the season. Leeks are dried and stored as well.
I have been waiting for the first glimpse of the Bái cái because it tells me, the foreigner, in this land that the COLD season will soon be here. TODAY, the Bái cái came out!!
